Crunchy, Tasty Bitterballen

In Plato Crater, there is a sub-plot around Holly, a young thief who is sentenced to community service at an antique Indonesian restaurant in the Netherlands. Blauw Zwaluw is one of the last restaurants licensed to burn hydrocarbons for the preparation of Dutch rijsttafel dishes.

In one scene Holly learns to cook bitterballen, the amazing, crunchy Dutch bar snack. I’ve shared  my favourite bitterballen recipe in a guest post on Cat Rambo’s blog
